The cuisine at Akbar is Muglai from India's Northern provinces. It is a regional style different from other Northern Indian cooking. Certain dishes like Chicken Malai Kabab & Prawn Kabab Masal a were introduced by Akbar for the first time in New York.
Muglai food - rich, fragrant, flavorful and spicy, is an intricate combination of subtle tastes and various preparation skills. It's neither oily or excessively spicy. THe varied spices, freshly ground and meticulously blended, are exclusive to every dish and gives its distinctive flavor and aroma.

Akbar's redcipes developed through 5000 years of good cooking. The art of Norhtern Indian style cooking is in its preparation using a delicate balance of herbs and spices. One ingredient should never dominate a dish. Indian spices serve a dual function. For instance, saffron is used to treat colds. Cumin stimulates the appetite and aids the digestive system.
Indian food is low in fat and high in protein. For centuries, Indians have known yogurt is an excellent source of protein, and yogurt is to Indian cooking as white wine is to French cuisine. Dal (lentils) is another source of protein, especially important to vegeterians.
